CAKE IN A MUG: MARCH

RASPBERRY CHEESECAKE…

So now we’re into March and coming up right at the end is Mother’s Day! Therefore, this month we have made a cake in a mug which is perfect as an indulgent treat for mum on her special day. Whether you’re a mum and want to make it for yourself or the little ones want to give this simple recipe a go, it’s definitely a treat that’ll be enjoyed. Sit back on Mother’s Day and enjoy a cheesecake in a mug in one hand and a refreshing cup of tea in the other…

Ingredients

1 egg white
6 tbsp low fat cream cheese
4 tbsp low fat sour cream
4 tbsp sugar
1/2 tsp vanilla extract
1 tsp lemon juice
1 tsp cornflour
2 tbsp frozen raspberries
1 digestive
One large mug or two small tea cups

Method

Whisk together the egg white, sour cream and cream cheese until fluffy.

Add in the rest of the ingredients EXCEPT for the digestive.

Mix well and pour into a MAKE International mug.

Microwave for 2 minutes (time may vary with microwave).

Crush the digestive by sealing it in a food bag and smacking it with a rolling pin.

Sprinkle the crushed digestive on the top of the cheesecake.

Place in the fridge to set.
