January certainly isn’t our favourite time of the year… all the festivities are over and we’re back at work! Everyone is sat around nibbling on carrot sticks trying to keep up with their ‘new year, new me’ diet, our mugs are empty because someone suggested we should cut back on caffeine and we’re already trying to think of excuses to get out of the gym this evening. Who said that New Year’s resolutions were a good idea? This isn’t fun at all.

However, we’re not ones to sit around complaining, we’ve found the solution, a perfect little pick me up. Grab those mugs, grab those carrot sticks, we’re whipping up some CARROT CAKE!

It might sound like cheating but we are pretty certain this still counts as sticking to our diets, there are vegetables in it after all 🙂 Plus it’s so easy we can even make it in the office microwave – as long as the boss doesn’t catch us making a mess.



  • 3 tbsp self-raising flour
  • 3 tbsp plain flour
  • 2 tbsp maple syrup
  • ¼ tsp baking power
  • 1/8 tsp salt
  • ¼ tsp cinnamon
  • 4 tbsp milk
  • 2 tbsp vegetable oil
  • ¼ tsp vanilla
  • 3 tbsp carrots (finely grated)
  • 1 tbsp raisins



– Mix all the dry ingredients together in your favourite MAKE International mug – we have used our Scion Living Mr Fox standard size mug in neutral and orange to make a colour coordinated photoshoot ;-).

– Add the wet ingredients and whisk until smooth – watch out for lumps and make sure you whisk them out.

– Microwave for 1-1.5 minutes or until baked through. Done!


Top Tip…

We think it’s best to enjoy your mug cake straight away whilst it’s still warm; and if you’re bored of being good already and want some extra indulgence, add some cream cheese frosting on top just like we did. Yummy!
