It’s April now and we have welcomed spring – everything has turned a leafy green again and we have even got pretty splashes of colour from the flowers too!

This month we have made a mug cake that turns out a lovely shade of green just like spring.

Avocados are very trendy at the moment, you see them everywhere from mouth-watering brunches to fitness blogs so why not stick them in a dessert too! They make an incredibly-textured and beautifully coloured cake…


2 tbsp fully mashed ripe avocado*
4 tbsp all-purpose flour
3 tbsp granulated white sugar
½ tsp baking powder
2 ½ tbsp milk
½ tbsp vegetable oil
*It is important to mash the avocado first as 2 tablespoons of mashed avocado is not the same as scooping out 2 tablespoons of avocado.

Your favourite MAKE International mug (we used Jane Foster’s sausage dog mug from the animal magic range)

Mix together all ingredients with a small whisk in a mug until a smooth batter.

Cook in the microwave for about 1 minute 20 seconds at 1000 watt. Your time may vary slightly to this.

Let cake cool for a few minutes before eating.

Top Tips

Use really ripe avocados and mash until there are no chunks left. That way you won’t have lumps of unsweetened avocado in your cake.
The smaller your mug the closer the cake will rise to the brim however don’t go below about a 250ml mug as the mug will overflow in the microwave.
Eat the mug cake within a few minutes of being cooked as this is when it is at its best!
